Ingredients
*1 small sized pumpkin.
*1/2 cup of roasted and peeled Groundnut.
*Assorted meat---goat meat,beef or cow leg.
*Assorted offals----bowel,heart and kidney.
*1 piece of smoked fish.
*1/4 cup of dawadawa(locust beans,also known as iru in Yoruba)
*2piece of atarugu(ata rodo,ose,scotch bonnet).
*1small bunch of yakuwa leaves(sorrel)
*1 bunch of spinach
*1 cooking spoon of palm oil-optional
*Seasoning
*1 piece of tatashe(red bell pepper).
*2piece of tomatoes.
*1 onion
* Salt
RECIPE
1-Season and parboil your meat,add smoked fish,and finely diced pumpkin.
2-When cooked through,take out the meat and fry on low heat.Remove the smoked fish and set aside in a dish.
3-Mash the cooked pumpkin to a pulp in the pot containing the beef stock.
4-Blend the groundnut to a paste,also blend the mixed pepper and boil to reduce it to a thicker consistency.
5-Put the fried meat into the pot with the beef stock and mashed pumpkin and leave it to boil on a low heat until the stock start to bubble.Add the groundnut paste,stir and let it dissolve. And one and half cooking spoons of the reduced pepper,add your palm oil and season with locust beans,salt and seasoning cubes to taste.(Stir)
6-Let the soup thicken to enhance the flavour. Wash and chop some spinach into the pot,stir,in and leave for 2minutes.Add the smoked fish.
7-Rinse,chop and add the yakuwa leaves to the soup.If the soup is too thick, add a little water or beef stock and you are done.Avoid cooking for too long to keep the vegetable bright green,contrasting nicely with the soup.
8-Dish ad desired and serve with Tuwo.
