      Sweet potatoes are a nutritious
vegetable.They are high in vitamins A,B5,B6,thiamine,niacin,riboflavin and carotenoids.They are fat free,relatively low in sodium and have fewer calories than white potatoes.
    Sweet potatoes come in various colour such as white,yellow, pink and purple.Sweet potatoes contain more beta-carotene per ounce than carrot and other similar foods.Beta-carotene is a precursor for vitamin A, and the healthy benefits are numerous.
   Vitamin A doesn't only help to keep the immune system strong and active,but also helps the skin,vision and even mood.Adding it to your child's diet greatly increases his chances of staying healthy and vibrant for many years.
  A medium size potato contains more than your child's daily requirement of vitamin A,nearly a third the vitamin C he needs,almost 15% of his daily dietary fiber intake and 10% of the necessary potassium. So,if you want to prepare sweet potatoes that your child will love and keep asking for,here is the recipe for potato pudding.
            INGREDIENTS
To make 8 servings:
* 6 large sweet potatoes peeled and quartered
* Half cup of butter,melted
2/3 cups of dark brown sugar
* 2/3 cups of white sugar
* 4eggs,beaten
2/3 cups of orange juice
* 2 teaspoons of vanilla extract


        Directions
1-Preheat oven to 350degree F (175degree C) and utter a Two and half quarter baking dish.
2-Bring a large pot of water to a boil,add potatoes and cook until tender(about 20 minutes), and then drain and smash.
3-In a large bowl, combine the mashed sweet potatoes, butter,brown sugar,white sugar,eggs,orange juice and vanilla.Stir until smooth,and pour into buttered dish.
4-Bake in preheated oven for 40minutes.
    If eaten in moderation and prepared in a healthy way(that is,not indulging in sweet potato fries),sweet potatoes are a nutritious delicious food that pose no significant health risk. However, they are high in carbohydrates, hence,should be eaten with vegetables.
